Sometimes people don't understand or want to accept our choices and we need to prepare for our response to maintain the integrity of our choices in any environment.

Preparing for Thanksgiving physically and emotionally :)

Sharing some of our busy day today :)

Raw carrot avocado soup for one :
( for two just double the recipe )
2 carrots
2 celery stalks
1 -1 inch piece of ginger
1 small wedge of lemon
1/2 clove of garlic ( which I didn't have in the video because garlic wasn't in my Vegan On Less budget this week)
1/2 cucumber
1/2 avocado
Sea salt to taste if desired
Wash and cut up all veggies except avocado half (set avo aside). Juice all ingredients through juicer then put juice in food processor and add avocado half. Process until soup emulsified and turns creamy. Serve and garnish with pepper or fresh herbs :)

1/3 cup gluten free rolled oats
1 medium Gala apple, peeled cored, and chopped into 1- inch pieces
1 Tablespoon chia seeds
1/2 cup unsweetened applesauce
1 cup almond milk
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of fine-grain sea salt
1/2 teaspoon vanilla extract
1 Tablespoon pure maple syrup
1 Tablespoon chopped walnuts for serving ( I used pumpkin seeds)
1 Tablespoon hemp seeds
Pinch of shredded unsweetened coconut for serving
In a medium saucepan over medium heat, combine the oats, apple chia seeds, applesauce, almond milk, cinnamon , ginger and salt. Whisk well to combine. Bring the mixture to a low boil over medium heat. Simmer for 8-10 minutes stirring often
When mixture had thickened and the liquid has been absorbed, remove the pan from the heat and stir in the vanilla and maple syrup to taste.
Pour the oatmeal into a bowl and top it with chopped walnuts ( or other nuts), hemp seeds, a pinch of cinnamon ( if desired), shredded coconut and a drizzle of pure maple syrup. Enjoy!
